Hotpot is the most forgiving meal in China: you cook your own food at the table, at your own pace, and you control exactly what goes in. 2. The ordering flow (in order)

Every hotpot meal follows the same four steps: (1) Pick the broth, (2) pick the meat, (3) pick vegetables and carbs, (4) build your dipping sauce. Most modern shops have you scan a QR code on the table and order from your phone — the menu has pictures, often English. If it's a paper menu, just point.

4. Table etiquette nobody tells you

A few unwritten rules keep it smooth. Cook in batches — drop a little meat, wait, fish it out; don't dump the whole plate. Use the provided chopsticks for raw food, then eat with your own (most tables give a pair of long public chopsticks for cooking). Never stab the pot or wave your chopsticks over it. Beef and lamb cook in seconds; tripe and shrimp paste need a minute; root vegetables take longer. Err on the side of fishing things out early — undercooked veg is fine, overcooked meat is rubber.

5. Paying, and the numbers

You order by QR and the bill settles by QR. Split the bill easily — each person can scan and pay their own share. There is no tipping in China; service is included and leaving cash is sometimes confusing or refused. Haidilao's 2026 average is about ¥97 a head; a satisfying local meal lands around ¥70–100. Budget a little more if you're ordering beef and seafood.

6. Know the regional style

"Hotpot" covers several very different cuisines. Chongqing/Sichuan style is the spicy, numbing red oil you've heard about — heavy on chili and peppercorn. Beijing-style (shuan yangrou) is a light clear broth where you dip paper-thin lamb into sesame paste; mild and beloved in the north. Chaoshan beef hotpot uses a bone broth and obsessively fresh sliced beef — almost no spice, all about quality. 8. Non-spicy, vegetarian & the traps
